Pasta salad is one of those things that reminds you of summer picnics. It can be nice and light but very satisfying as well. What’s better than pasta? An easy pasta salad… There are some good things about pasta: kids love it, adults love it – who doesn’t love it? However, we know the dangers of pasta as well, so for this recipe we’re using whole wheat pasta.
Easy Pasta Salad
This recipe is super easy to make and quick! Imagine having lunches for a few days in under 40 minutes. We know your kids will love it:

Bowtie Pasta Salad with Basil Ribbons

Ingredients

  • 8 oz dried whole wheat bowtie pasta
  • 1 small red bell pepper, diced
  • 8 oz cooked chicken, cut into ¾-inch dice
  • ½ cup crumbled feta cheese
  • 1 cup canned chickpeas, drained and rinsed
  • ⅓ cup fresh basil leaves, cut into thin strips
  • ⅓ cup Italian salad dressing

Directions

  1. Cook the pasta according to package directions
  2. When done, drain, rinse with cold water, and drain again.
  3. Place the pasta in a large bowl.
  4. Add the following ingredients: bell pepper, chicken, feta cheese, chickpeas, basil, and salad dressing and stir to combine.
  5. Pack enough of the salad for lunch in a plastic container with a tight-fitting lid or a bento-style lunch box
