Passover desserts are hard to perfect and depending on your restrictions it can be super tough to find a foolproof and satisfying dessert. Today I have two matzo bread based desserts that you and your kids will love.
Pistachio, Almond, Honey and Sea Salt Matzo
You’ll Need
- 5 ounces chopped dark chocolate
- 1 tablespoon honey
- 2 sheets matzo
- 1/2 cup coarsely chopped roasted unsalted pistachios
- A flaky sea salt
- Craisins (optional)
- White chocolate to decorate (optional)
Directions
Melt chocolate in a bowl set over a pan of simmering water – or use a double boiler.
Remove the chocolate from heat and stir in the honey.
Spread the mixture evenly over matzo using a small offset spatula.
Sprinkle with pistachios .
Garnish with salty.
Passover Bread Pudding
You’ll Need
- 4 matzos
- 1 tablespoon apple
- 3 oz raisins
- 1 ½ oz dried apricots
- 2 oz chopped and toasted almonds or favorite nut
- 2 ½ oz sugar
- 1 teaspoon cinnamon
- ½ teaspoon grated nutmeg
- 1 tablespoon honey
- 1 lemon
- 3 medium eggs
- 3 tablespoons matzo meal
- 3 oz margarine
- 1 tablespoon sugar
- 2 tablespoons marmalade
Method
- Break up the matzos into a bowl, cover with cold water and steep for 10 minutes.
- Drain and mash with a fork.
- Preheat oven to 350 F.
- Grease a 9 inch square baking dish.
- Combine mashed matzos add apple, raisins, apricots, nuts and mix well.
- Add half the sugar and cinnamon, nutmeg, honey, lemon zest and juice. Mix again.
- Beat eggs with the remaining sugar for a few minutes, until the mixture is creamy and the sugar has dissolved. Stir in melted margarine and scrape into baking dish.
- Level out and scatter over the 1tbs of sugar.
- Bake about 1 hour. until a toothpick inserted in the center comes out clean and top is browned and slightly puffed
- Once baked melt marmalade or jam in a pan and brush over pudding to glaze and leave to cool.
